Chicken Enchilada Nachos Recipe



For you who want to try to taste the Mexican food, you can make chicken enchilada nachos. This is also for you who loves nachos and want to try to make it become a delicious meal. This food can be your menu for dinner.

Actually, you can make your own style of this menu. But probably some of you didn’t know how to make it and the ingredients to make it perfect. You can cook this for up to 20 minutes, with around 15 minutes of preparation.

The ingredients to make chicken enchilada nachos are quite many. But you will enjoy making it. 

Here’s the list of full ingredients :

1.        2 cups of shredded cooked chicken
2.        1 ½ cup of red enchilada sauce, you can buy it or make it by yourself, then divide
3.        10 ounces of tortilla corn chips
4.        8 ounces freshly grated sharp cheddar cheese
5.        1 peeled avocado, then pitted and diced (tossed with a tablespoon of lime juice to prevent it browning)
6.        ½ cup of diced red onion
7.        ½ cup black beans or half of 15 ounces can rinse and drained
8.        ½ cup whole drained kernel corn
9.        1 small stemmed, seeded and diced jalapeno (you can add more as you want)
10.    ½ cup of chopped fresh cilantro leaves

You can also choose to add the sour cream. This is optional to make the chicken enchilada nachos.

The steps to make chicken enchilada nachos

First, preheat your broiler and prepare a medium mixing bowl.  Add the chicken and ¾ cup of enchilada sauce together into the bowl. Toss it until the chicken is evenly coated then set aside.

Spread the tortilla out evenly on a large baking sheet, and then sprinkle evenly with the cheese. Place the sheet in the oven under the broiler until you see that the cheese is melted.

Remove it then make a topping for this chicken enchilada nachos. Top the chips with shredded chicken, avocado, black beans, red onion, corn, and jalapeno. Return the sheet to the broiler for up to a minute.

Remove the sheet and sprinkle the chips with chopped cilantro. Then drizzle with the remaining enchilada sauce.

Now, you can serve it and enjoy your own menu. Serve this chicken enchilada nachos warm and if you would like to add the sour cream, drizzle it with the fork.
